Healthy Vegetarian Matcha Cookie
Portion for 24 small cookies
Ingredients
- 120 g whole wheat flour
- 1tsp cornstarch
- 100g coconut sugar
- 1tsp vanilla syrup
- 1 egg white
- 25g butter (coconut oil if you are vegan)
- 1/4tsp salt
- 3/4tsp baking powder
- 60g Beau Durée matcha spread
- 1tsp matcha powder (optional)

How to cook👩🏻🍳
- Preheat the oven at 180'C
- Whisk together the flour, cornstarch, baking powder and salt
- In a separate bowl whisk together the melted butter, egg white and vanilla syrup
- Stir in the coconut sugar
- Add in the flour mixture, stirring until incorporated. Chill the cookie dough for 30 minutes
- Roll the cookie dough into 24 small sphere, and place them on the prepared baking sheet
- Use the index finger and make an indentation in the centre of each and full with Beau Durée Matcha Spread
- Bake at 180'c for 8-10 minutes
