Healthy Vegetarian Matcha Cookie🍪

Healthy Vegetarian Matcha Cookie 

Portion for 24 small cookies


  • 120 g whole wheat flour
  • 1tsp cornstarch
  • 100g coconut sugar
  • 1tsp vanilla syrup 
  • 1 egg white
  • 25g butter (coconut oil if you are vegan)
  • 1/4tsp salt
  • 3/4tsp baking powder
  • 60g Beau Durée matcha spread
  • 1tsp matcha powder (optional)



How to cook👩🏻‍🍳


  1. Preheat the oven at 180'C

  2. Whisk together the flour, cornstarch, baking powder and salt

  3. In a separate bowl whisk together the melted butter, egg white and vanilla syrup

  4. Stir in the coconut sugar 

  5. Add in the flour mixture, stirring until incorporated. Chill the cookie dough for 30 minutes

  6. Roll the cookie dough into 24 small sphere, and place them on the prepared baking sheet

  7. Use the index finger and make an indentation in the centre of each and full with Beau Durée Matcha Spread

  8. Bake at 180'c for 8-10 minutes
